Restylable, matte, water-based product for fine, medium-length hair
I'm new to this whole "hair styling" thing. Have always had ultra short hair, but have recently been convinced by my balding friends to flaunt it while I got it. I need some advice!

My hair is medium length, probably about 3" up top, shorter on the sides, but not very short. Certainly nothing like an undercut. The hairstyle I'm going for is a casual / lazy part. Basically, like I didn't bother styling my hair at all: got out of bed, brushed it back with my hands a couple of times, and it magically stayed there (lol!)

I picked Jake Gyllenhaal because I have similar hair color and seemingly texture to him.

So my requirements:
1. I'm looking for something matte. I've no idea about the level of hold I need. I'm currently using American Crew Fiber, and it definitely does not have quite enough hold, as the hairstyle collapses pretty quickly (1-2 hours?) I can get it to hold better if I apply more, but at that point it starts to appear too shiny.

2. I'm looking for something restylable / something that doesn't dry out and get firm. I live up by the Great Lakes, and it gets cold here. I'm going to be wearing thick hats all winter. So I need to be able to take the hat off, and reshape my hair back into the look I want. American Crew Fiber that I've been using is not very good for this.

3. I *think* I'm looking for something water-based. I don't like using shampoo in my hair (shampoo about once a week) and I'm also not sure how my skin would react to oil-based products. But I could probably be convinced to try it if it met my other requirements.

I've looked at reviews for tons of products, and diligently searched this forum before asking, but I haven't found exactly what I'm looking for, and to be honest, I'm overwhelmed. Oh, and I don't have $200 laying around to spend on all the many products that look like they might work, only to find out that they don't.

Long post, I'm really sorry about that. I will be insanely grateful for anyone who can point me in the right direction!
